Portugal’s long history with codfish & recipe favorite Bacalhau á Gomes de Sá

The Portuguese have a very long history with codfish: shortly after Columbus (about 500 years ago) ‘discovered’ America, the Portuguese were fishing for cod (bacalhau) near NewFoundland. They were the first Europeans to do so. The nickname of bacalhau is ‘fiel amigo’ (faithful friend).

When you stay in Lisbon or in the wonderful country Portugal, a must-try is bacalhau (dried and salted cod).  The Portuguese adore it and it’s said that they know at least 365 different ways to cook it…one for each day of the year!

The smell of dried and salted bacalhau is odd and penetrating……pfffffff… but the taste is absolutely delicious when cooked!

Bacalhau deserves a good wine: green (Vinho Verde) or mature wines, from Alentejo, Dão or Douro.

History

For at least 500 years ago the Portuguese learned how to salt cod at sea and sun-dry it. It keeps for many months this way without refrigeration. And then it requires being soaked for 24 hours in changes of water before being used to prepare a dish. The soaking reconstitutes the fish and gets rid of the excessive salt also.

Even today, where refrigeration isn’t a problem, the Portuguese have not lost their love for bacalhau. Dishes based on this main ingredient are sure to be a part of most holiday and other celebrations.

One of the reasons for the popularity of bacalhau in Portugal and other catholic countries, was because of the many days on which the Church forbade the eating of meat.

Bacalhau á Gomes de Sá, cooked in a casserole with thinly sliced potatoes and onions,  garnished with hard-boiled eggs and black olives.

This recipe was invented by Jose Luis Gomes de Sá  Jr., the son of a rich nineteenth century merchant (apparently he dealt in cod) in Porto. The family fortune dwindled and the son had to find a job at the famous restaurant Lisbonense in downtown Porto. It was there that he created the now well known recipe.

´‘BIANCA’ save the animals, give them a temporary shelter, treat the sick ones, vaccinate them and finally find new, responsible owners.

Association BIANCA’ was officially created on 17th July 2002. First, it had neither kennel nor any other physical structure. Its work was based on private houses and hotels for animals. In 2006 the kennel was opened – with a capacity for 50 animals. Today more than 400!  🙁

‘BIANCA’ does not want to be a deposit place for animals. They deserve much more than that!


‘BIANCA’ receives around 50 new animals every month. It is always a struggle to keep a reasonable number of them in the shelter and to be able to rehome as many as possible every month.

Many animals that  ‘BIANCA’ receive are in a very bad state: after an accident, with broken bones and wounds, puppies and kittens found dehydrated in garbage bins, animals physically abused.

Veterinary bills

‘BIANCA’ has always many female and male dogs to sterilise. Females are always urgent.

The volunteers of ‘BIANCA’ count with the help of the vets who give them discounted prices but nevertheless the  monthly veterinary bills are significant. Every animal that is given for adoption from the kennel is vaccinated, dewormed and has a chip. All adult female dogs and cats are sterilised and many male dogs and cats castrated.

Adoption

Female puppies and kittens are given for adoption on the basis of an adoption contract in which the new owner obliges himself to have them sterelised when they reach the right age.

Flight assistant

If you fly – on vacation or for work – from Lisbon to Belgium, Holland, Germany or Denmark, you can help the pets. You can take an animal with you to its new home.

A Friday afternoon, around 16:00. Restaurant Ramiro is open from 12:00 till midnight, so if you like to come in at 17:00 you’re welcome!

Portuguese love there seafood with beer (or with ice cold vinho verde , young wine). You can order big shrimps (gambas or camarão tigre), scampi (lagostim) and crab (caranguejo).

Cooked fresh seafood tastes fantastic with mayonaise, grilled seafood goes very well with ‘molho de limão’. This is a sauce of butter, lemon and a bit of piri-piri.

One of my favorite dishes: Camarão à Guilho (garlic shrimp).

If you’re only in the mood for a snack, try a prego’ , a steak sandwich. The steak is grilled on the plate. The Portuguese eat the prego’s (literally: nails, referring to the full stomach after eating one) with mustard or piri-piri.

Cascais is a famous & chic vacation spot in Portugal by the Atlantic Ocean, quite close to Lisbon (about 25 km; 30 minutes by train, 15-20 minutes by car).

The Half Marathon (March 22, 2010) is a complementary race of the Lisbon Marathon for all those which do not have an adequate preparation for the mythical 42 kilometres and do not want to miss the event. The race starts in Almada on the south side of the 25 de Abril bridge and there’s also a mini-marathon.

Former palace & conspiracy

The beautiful building is a former palace. About 300 years ago a well-to-do and important Italian diplomat, marquis Polucci di Calboli, and his family lived here. The story tells about a conspiracy, the fact is that the family disappeared and a lot of beautiful art, collected for generations, was robbed.

We were enticed by the 8 € for the dish of the day (leitão grelhado , grilled pig), but a glass of house wine is 3.50 € (home-produced, very good taste). Unrequested starter: 4.50 € for 5 slices of chouriço (spicy sausage) 🙁

The bill came to 40 (2 people, incl. bread, water &  dessert: mousse manga). No ATM, only cash.

You have to pay for starters like bread, butter, chouriço, cheese and often olives, tuna or sardine paste, or shrimps (camarão).

Those starters are not free, feel free not to touch them and they will not be charged on your bill.

You won’t pay for starters if you don’t eat them, the waiter will take them away (não, obrigado): ‘No thank you’.

Owner Graciano Germano and his wife are very friendly. The bill was not as painful as it could have been in this area. Restaurant owner Sr. Germano took the time to tell us the story about their home-produced wine.

Then we could buy 2 bottles of wine for a friendly price 🙂

A little bit hidden in the former Moorish quarter Mouraria, in a small street of one of Lisbon’s oldest districts, there’s Restaurant Zé da Mouraria’. Open for a typical Portuguese lunch (almoço) from 12:00 till 16:00. Closed on Sundays.

Conserveira de Lisboa (The Lisbon Cannery store) has been covered in many newspapers, tv-programs and on the internet, never paid for any promotion but is listed by many touristic guides.

The shop opened in 1930 under the name ‘Mercearia do Minho’ and changed it’s name to Conserveira de Lisboa in 1942. In the beginning days the company sold all kinds of alimentation, concentrating on canned foods.

In 1942 the company applied for the registration of the first two brands of conserves: TRICANA and PRATA DO MAR.

Tricana was registered in 1948 and Prata do Mar in 1956.

 

Macquerel (filetes de cavala), tummy (atum), squid (polvo) and cod (bacalhau).

During the second world war the industry of conserved fish products developed rapidly and it helped the company to evolve quickly, reaching it’s peak with the colonial war in ’74. After this period, the conserves market shrinked steadily, frozen food became a more common way of conservation.

Confronted with this perspective of a further declining market, the Conserveira chose to remain operating on this niche market and offer only quality products. This way the shop also survived the aggressive low prices by the supermarkets.
